Cauliflower broccoli mushroom cheesy baked

Though the name sounds as if its super high calorie food, its not. I tried it for my dinner, it was yummm, fills your tummy, yet healthy. 1 serving approx has approx 300 calories, which is perfect for 1 meal.

Quantity: 2 serving   Preparation time: 20 minutes   Cooking time: 45 minutes

Ingredients:

2 cups cauliflower florets

1 cups broccoli florets

4 mushrooms

100gms grated mozzarella cheese

100gms grated parmesan cheese

50ml milk

2 tbsp of all purpose/wheat flour

1 tbsp of butter

Salt & grounded pepper to taste

1 tsp Mixed herbs

1/2 cup of bread crumbs (optional)

Method:

  • Preheat the oven for 10 minutes at 175 degrees
  • Chop mushrooms in to 4 or 6 pieces each
  • Ensure florets of cauliflower and broccoli are of same size to cook them uniformly in oven else small pieces will get burnt and big ones wont e cooked
  • Wash them all and dry them using towel, and let it rest for few minutes

  • In a pan, add butter let it melt. Add flour and mix well for 2 minutes. Then add milk.

  • Keep stirring continuously until it reaches thick consistency. Make sure no lumps are formed. Turn off the stove, add 75% of both cheese, salt, pepper, mixed herbs and mix well

  • In wide bottom oven safe bowl, spread the sauce

  • Arrange half of the vegetables, spread some of left over grated cheese (both), pinch of salt & pepper

  • Add some more sauce, fill it in such way all vegetables are covered with sauce. Arrange remaining vegetables
  • Again on top add some of the sauce, cheese, , add bread crumbs (if adding)
  • Bake it for 30-40 minutes, until top layer has to be golden brown as shown in the picture

Notes:

  • In the traditional recipe, they o add bread crumbs to give nice finishing after its baked. I dint have bread crumbs, so i topped it with only cheese. So its fine if you don’t have it, it will still come out well 🙂
  • I love mushrooms, so added them. It will ooze out water while cooking, which might make it little watery at the bottom. IF you don’t like such dish, don’t add mushroom
  • This sauce can be stored in fridge for couple of days. If the sauce is thick , add little milk, stir and bring to boil once.
  • Cheese’s quantity is totally up to you, you can reduce or add more as you needed
