Roasted garlic soup

Quantity: 2 servings   Preparation time: 20 minutes   Cooking time: 60 minutes


15 garlic cloves

1 medium onion

1 tbsp butter

2 tbsp olive oil

Salt& pepper to taste

pinch of mixed Italian herb (optional)


  • Peel the garlic and onion
  • Chop them both finely, I was lazy to chop garlic, instead in I pulsed the peeled garlic in the mixer
  • Heat the pan, add butter and oil


  • Once the butter melts, ad chopped onion and garlic to the pan and saute for few minutes, till they are cooked



  • Continue sauteing, till they become brown color like they are roasted. Not dark brown, but golden brown like below


  • At this stage, add half cup of water/stock (if anything available). Scrub the sides of the pan. Transfer to  blender/mixer and make into smooth paste
  • Add 2 cups of water, grounded paste back to the pan, salt, pepper, mixed Italian herbs and bring it to boil. Serve it hot. Traditionally its served with croutons (if available), don’t worry if not available. Still the soup will be soothing and comforting your taste buds an throat 🙂
